Acapulco Chicken


One specific function of this blog is for Katie & I to exchange recipes. Tonight's dinner at la Casa de Perry was Acapulco Chicken.

Ingredients for 2 servings:
2 chicken breasts cut into pieces
1 tbsp chili powder
1 tbsp olive oil
1 cup chopped green bell pepper
1/2 cup chopped onion
2 Jalapenos seeded & minced
1 large tomato, cut into chunks
10 drops of hot sauce

Directions:
Season chicken w/ 1/2 tbsp chili powder, salt & pepper. Heat oil in skillet over medium-high heat. Saute chicken. Remove from skillet & keep warm. Stir fry bell peppers & onion until soft. Add jalapenos, tomatoes, remaining chili powder & hot sauce. Cook for 3-5 mins. Add chicken & cook for an additional 2 mins. Serve over rice.

Alterations:
We didn't have a tomato, so I used a can of Rotel instead. (I had no idea what Rotel was before I dated a Mexican, but its awesome. It's diced tomatoes and green chilies in a can.) I added a jalapeno anyways because Matt's addicted to them :)

Results:
This dish definitely has a kick to it. I thought it was hot, Matt, on the other hand, added more Frank's Xtra Hot, ha ha. It took about 45 mins to make w/ all the prep time, and about 15 to eat :)
